To answer your question.... the "percentage of hydrogen" in this molecule pertains to the mass of hydrogen in comparison to the mass of the entire compound. First you must find the total mass, which is easily done by using your Periodic Table. The masses of each element in your compound are:
C: 12 amu (Atomic Mass units)
H: 1 amu
N: 14 amu
O: 16 amu
These masses are rounded for simplicity. In entry level chemistry classes, these numbers will work fine.
Now multiply each of these masses by the number of atoms of each element in your compound. (for carbon, 12*17; hydrogen, 1*21; etc.)
Add these four numbers to get your compound's total mass. The percent of this mass that is hydrogen is found by dividing the hydrogen mass total by the compound's mass total. You can do this with any of the other elements in the compound to get their respective percentages. (21/303=%H)
