A siege is a military action. During much of the Middle Ages, military actions were mostly decided by cavalry, with knights fighting on horseback. Castles and walled cities made it impossible for knights to have the advantage they had in the open fields.
An assault on a fortified structure required special equipment, which had to be made at the site. An alternative to an assault was the siege. The siege consisted of surrounding the city or castle and letting no one in or out, thus cutting the defenders off from food supplies.
Sieges did not always work for a variety of reasons, one of which was that they took a long time and were expensive to maintain. Sometimes, armies friendly to the people in the city surrounded the besieging army and cut them off from their own supplies.
If a siege did not end in a victory within several months, it probably would not work.
