The American Eagle logo has the eagle looking to his right/your left. This is not only true for the official US American Eagle logo, but also the logo for American Eagle Outfitters.

That's very unlikely. The logo was added by a private company and isn't part of the standard design of a US $2 bill. Such items are considered to be altered or damaged and have little or no interest for banknote collectors.
Southern Precision Instruments Company Incorporated I don't know that they are in business anymore. The website they have is very outdated and only mentions their microscopes and telescopes. No mention of rifle scopes. If you look at the logos on their other products, it matches the logo on my SPI rifle scope (that I purchased used with no paperwork). 'bout a nickel at most. All "wheatback" cents look like that, and it's not surprising that it would have a "logo" - actually called the denomination, 1¢ - that says ONE CENT on the back, just like a nickel says FIVE CENTS and a dollar says $1.
