It depends on what you want to use the device for. On average, the 8gb iPod Touch can store approximately 1,750 music files, OR 10 hours of video, OR 10,000 iPod-sized images. (The more images/videos you have, the less music space you have free). This does not include space used by downloadable apps.

The size of the app depends on what app you get on the iPod Touch. Generally, any app you can download across a Wi-Fi network is under 10 megabytes (mb), and all apps you cannot download across a Wi-Fi network are above 10 megabytes (and you will know because a text box will appear telling you that you must connect to a computer because the file size of the app is over 10 megabytes).

If you have most other models of iPod, you can use alternative media applications like Winamp, Amarok, etc. to transfer music and videos between your computer and your iPod, but you will still need iTunes to update or restore the firmware on your device.
