Atoms can only change in the number of electrons in their 'shells'. That's actually the way they can react with each other. When reacting, their properties will change a lot.

However, if the number of protons or neutrons changes that atom is not of the same element; this will only take place in NUCLEAR reactions, not in 'normal' chemical ones.
