The designation Hebrew is first used for Abram, distinguishing him thereby from his Amorite neighbors. (Ge 14:13) the Biblical evidence is that Hebrew (`Ivri) comes from the name Eber (`Ever), that of the great-grandson of Shem and an ancestor of Abraham. (Ge 11:10-26) Mandate of Israel: It is also possible that "HEBREW"comes from the name of the City of NI-IV-RU (UR). This was one of the main cities of the Sumerian Civilization. The descendants of Shem created it. Avraham and the Jews would then be the direct descendants of and the remnant survivors of Sumeria. The main Sumerian population was destroyed or vanished after Abraham's departure.

"Hebrews" (Ivrim) actually means descendants of Eber (Ever). Ever was an ancestor of Abraham (Genesis ch.10-11) and the earliest Hebrews were Abraham's uncles and cousins for several generations back. They were among the Western Semites and lived in northern Mesopotamia, near the confluence of the Balikh and the Euphrates.

Abraham (18th century BCE) was called a Hebrew (Genesis ch.14) because of his wider family.

Enoch (Genesis ch.5) lived long before any of the Hebrews.

Why did the early fathers of the church choose the of esther to put in the bible and not the book of enoch?

The choice of Esther was a not a challenge for early Church fathers because Esther had previously been included in the canon of the Septuagint and the standard Hebrew Scriptures (TANAKH) from which it derived. The Book of Enoch, on the other hand, was never in the TANAKH or the Septuagint. Enoch didn't meet the criteria for inclusion in the Hebrew canon. Except for the Coptic Scriptures, it has always been a stand alone volume. Parts of Enoch were found in the Dead Sea Scrolls, so it can be concluded that the Essenes thought highly enough of it to have it in their library, and also thought it worthy of salvaging.
