They are found in Mexico directly where the three galloping horses are on the map, the same location to find the Hungarian Half Bred in Red Dead Outlaws to the end. It is found and broken in like any normal horse in the game, it will respond to your whistles and is as fast as the Hungarian Half Bred.
These horses only spawn once, if they die or run away from you and de-spawns it will most likely not be in that game world again. You must kill the chupacabra found outside the Mexican Church (i cant remember the name of) before the unicorn spawns.
