Many Christian churches are doing baby dedications in-lieu of infant baptisms (see 1 Samuel for Hannah's story). Could not find a list of them you will need to ask a particular denomination/church for yourself. I have not heard of Catholic or Episcopal churches doing this service.

Why do Christian believers perform Christian ceremony on infants?

Some churches that consider themselves Christians teach that a baby cannot go to Heaven without baptism, so those churches baptize babies for that reason. Other churches believe that a baby will go to Heaven if it dies, regardless of what happens on earth, so they do not practice infant baptism, but they may have a ceremony where they dedicate a new baby to the Lord. This has no bearing on the child's salvation. It is simply a way of acknowledging that children are a gift from God and should be raised in the Christian faith.

Why would someone prefer to be baptised as a baby rather than an adult?

I would not say that anyone would prefer to be baptised as a baby rather than an adult. As a baby, you can not make a decision on what you would want. Some Christian denominations allow for Baptizing babies as a way to show that the baby will be raised in a Christian home and to ensure that if the child were to die before they were old enough to accept Jesus, they would still go to Heaven. Many other denominations (including most Baptist churches) believe in what is called the baptism of believers...that Baptism is an outward show of the transformation that you have experience as you accepted Jesus. They believe that a child that is too young to understand Gods Word and accept Jesus on their own will still be accepted into Heaven if they died. Some of these churches will have a "dedication" ceremony for babies...but this is more for the parents...saying that they Dedicate the baby to God, and Dedicate themselves to raising it in a Christian manner.
