I think they decided that it was just more user friendly and more fool proof than numbers. (747's hydraulic systems are numbered) The color coding of the hydraulic lines is a European practise. The Boeing designs and most US designed a/c have their hdraulic systems numbered. The color code is really just a way to Identify the separate systems in the documentation and the cockpit procedure as well as physically on the hydraulic tubing.
Not sure if I know what "giant machines" are, but I can make a comparison with Airplanes. Some large aircraft use pulleys and cables to work the flight controls and the newer ones use hydraulics or electrical servos. The cables have an advantage in that they are less complicated than hydraulic controls. Hydraulics have to have a reservoir, a pump, and usually high pressure lines as well as a return line. This requires a lot of maintenance and present more problems if the hydraulic lines required for large vehicles. The larger the vehicle, the more hydraulic oil to fill the lines. Modern military jets and the A380 use smaller hydraulic lines pressurized at 5000psi, which reduces the required volume of oil. Of course, a system pressurized at 5000psi seems to present more problems than a 3000 psi. Now, the cons of the pulley and cable is that this does not apply as much force as a hydraulic system. Also, for long cable runs and complicated controls, the cables require a lot of rigging and adjustment and checking the cable for damages from wear. Did that help??
They are attached with high tensile strength bolts, some have three, some six. they bolt directly to mounts on the wing structure and cannot be seen as they and the wiring and fuel and hydraulic lines and inside the outer cowling.

The function of hydraulic lines is to connect to the hydraulic system to carry either water, oil or any other form of liquid for that system. The hydraulic line is extremely important to the function of the system and works based on either a low or high pressure.
Electrical Suzis are the electrical lines passing alongside the hydraulic lines (or air lines) passing from the rear of the artic tractor unit; and connecting the the trailer. Hydraulic lines used to be colour coded, but this is no longer tha case. Hydraulic lines operate the trailer braking system (in conjunction with the footbrake and parking break); these lines include an emergency hydraulic line, should the first fail. The electrical connection lines operate the lights on the rear of the trailer, any running lines, and operates an anti-lock braking systems on the trailers axles.
