I believe the shortest route (depending on stop overs) from Toronto to Cape Town is via London Heathrow. Take AirCanada to London and South African Airways directly to Cape Town. There are various other options available; through Amsterdam (with KLM) or Abu Dhabi (with Etihad). If you cannot find a suitable direct flight, you can also try flying to Johannesburg and catching one of numerous domestic flights to Cape Town (about 2hrs).

This obviously depends on the route. I have made the trip at least 10 times via Heathrow. For that trip plan 8 hours flying time to Heathrow, an extended wait (10 to 12 hours) then a flight of 11 more hours to Cape Town. Total travel time is generally 35 hours. 2 hour pre flight arrival at the airport in Vancouver, 8 hour flying time, 12 hour layover in London, 12 hour flight to Cape Town and 1 hour to collect bags and clear customs and immigration in Cape Town. Other possibilities for routing include Vancouver/Frankfurt/Cape Town; Vancouver/Amsterdam Cape Town and Vancouver/Seattle/Atlanta/Cape Town. Enjoy the fight, it is a monster and a nightmare with kids but Cape Town is worth the effort!
