Breeding dairy cows produces calves which subsequently makes them produce more milk in the next production year. Calves are also raised as replacements (if they are heifers) for the other cows, as these calves have been selected, through the process of sire selection, for giving more milk per year when they mature into cows.

Dairy goats are indeed bred, they are just bred every couple of years instead of every year like dairy cows. You can't produce more dairy goats without breeding them!

What jobs is in a dairy?

There are a lot of different jobs in a dairy: milking, breeding, feeding, nursing calves, treating of hospital cows, assisting cows with calving, maintenance, etc. A small dairy (till about 200 cows) will have one or two people do all the jobs, a dairy that is larger will have more and more specified jobs. At a 1000 cow dairy or larger the milkers will just be milking and the feeders just feeding, etc.

Why do dairy cattle have less of a fligth zone?

Upon generations and generations and generations of selective breeding, dairy cows have been selected to not only give more milk than their calves can take in, but also to be docile and easy to handle in the milking parlor. Genetics, my friend, is the reason why dairy cows have less of a flight zone. It is not a good thing when dealing with dairy bulls though.
