Cubic inches is the total volume of all cylinders.
If you wanted to know the cubic inches of a particular engine you would measure the diameter of the cylinder bore and the stroke of the crankshaft, then use your calculator to figure out the total volume.
The formula for the area of a circle is pi times the radius squared.
The formula for the volume of a cylinder is area of the circle times length (stroke) of the cylinder.
Once you have the volume of the cylinder you can multiply that number by the number of cylinders for total volume (displacement).
