Easter eggs symbolize fertility, and this is related to the ancient fertility cults and their spring celebrations that Easter mimics in some ways. In fairness, Easter eggs are not a sanctioned part of Easter celebrations for most churches.

Eggs are a traditional Pagan symbol of Spring and rebirth. The first Easter Egg is attributed to Mary Magdalene when she found Christ's tomb empty. She brought an egg to show people in order to symbolize the resurrection of Christ. She dyed it red to symbolize his blood and previous state of death. Originally, all Easter Eggs were red (and still are in the Orthodox tradition), but eventually the pastel colors of Spring came to predominate.

The egg is a traditional symbol for Easter dating back centuries. There was a pre christian celebration called Eostre (sp) which celebrated spring. Eggs were used to symbolize birth and new beginings. When the feast of Easter was put into the Church calendar, the calculation of when the week of religious ceremonies would be each year, it is calculated from the full moon and the Spring equinox. Tied in with this is that Passover for the Jewish peoples usually is within the same timeframe. As part of the Seder plate (food items commemorating the importance of the Seder celebration and Passover and the journey of the Jewish people) there is a baked egg in the shell.

So eggs are not only Easter symbols but also symbolize Spring and birth and new beginnings.

Good question!

The egg is an ancient symbol of rebirth connected to the Spring, when life returns to the dead cold Earth.

It's actually rather pagan, but the Church is cool with it, as long as it reminds us about the resurrection of Jesus Christ :-)

That's my take on it anyway, perhaps somebody else has a better explanation?
