Acetone has a somewhat strong dipole but the overall molecule is fairly nonpolar, at least when compared with water. Parafin is exceedingly insoluble in water and mixtures of acetone with greater water content exhibit less solubility for the parafin. By taking the saturated solution of acetone/parafin and slowly adding water to dilute the acetone, solid parafin will be forced to precipitate because the solvent is no longer able to dissolve as completely.
