"Nitro" is the opposite of "Retro" in Mario Kart. The term nitro refers to any cup consisting of courses new to the Mario Kart series (courses not returning from an earlier Mario Kart game).
On Mario Kart DS, you have to get first on all nitro cups on 50cc. On the Wii, you have to beat the 100cc leaf cup. Mario Kart 7 doesn't have Dry Bones.

The "Wii Cups" in Mario Kart Wii are the cups in the top half of the cup selection menu. In Mario Kart DS these were known as the "Nitro Cups". The Wii cups are the Mushroom Cup, the Flower Cup, the Star Cup and the Special Cup. The Star and Special Cups have to be unlocked.
Retro Cups are the cups in which previous courses in older Mario Kart games are reused. In the case of Mario Kart Wii, the bottom four cups consist of old tracks.
To get new courses, you have to unlock cups (2 in the nitro and two in the retro) by getting gold trophies in the starting cups. After you have unlocked all the cups in 150cc and gotten gold trophies in them, you can unlock Mirror (known as 'extra mode' in Mario Kart 64), which is flipped courses in 150cc mode.
To unlock Daisy, beat all of 50cc Nitro Cups. To unlock Dry Bones, beat all of 50cc Retro Cups. To unlock Waluigi, beat all of 100cc Retro Cups. To unlock R.O.B., beat all of 150cc Mirror Nitro Cups.
