During evaporation, intermolecular interactions are broken so that molecules leave the liquid phase (where they are more closely packed and interact more frequently) and enter the gas phase (where they are essentially so far apart that they no longer interact with each other, an assumption of the Kinetic Molecular Theory). The substance does not change identity and no covalent bonds are broken or formed.
