Stephans curve is the graph showing how the pH level at neutral in the mouth is 7 and everytime it drops below 5.5 it is deemed critical and an acid attack happens. this happens everytime you eat and drink. so the more you snack the more these attacks happen. it takes 20-30 mins for the mouth to neutralise.
