The days of students being able to earn easy money during vacations are probably over. Temporary jobs do still exist, but not in large numbers and the competition for them is usually fierce. The easiest way for a student to earn money, although not necessarily "easy" money, is to use their skills or interests in an entrepreneurial way. Hence a music undergraduate may offer to provide extra preparatory lessons to a young person taking music exams. Or, a student with an interest in gardening may hire themselves out to do landscape maintenance. These are examples of successful ways for a student to earn money during vacations.
