I personally hate that myself. It's always quiet and awkward. But what you can do is bring up some stuff you did together a while ago, and talk about that and how much fun you had! After awhile you will find some other stuff to talk about.
You can talk about how feel about each other.Ask him/her how his.her day was and tell about your day was. Try to see what are his plans wen he/she graduate.when its a fresh relationship meaning y'all just started dating ask him/her what he/she likes about u. see what he/she likes to do . where he/she would like to travel.what are his/her future plans in life. do he/she want kids .
Talk about your day, joke around, talk about stuff you'd want to do together over the weekened or break. Talk about things your both interested in. You could even ask questions to get to know them better. Don't think too hard about it ! Going out with someone should emply that their easy to talk to and always have things to talk about.

depends on the topic, but he could just not feel comfortable discussing whatever it is that he doesn't want to talk about. Guys are guys, he might not want to talk about it until well after marriage or never at all.
Another way to try it, is for you to open up on that same topic first. That will give him the confidence to talk about it.
