Well give the pokemon stuff like protein or give it a soothe bell. Leveling up gives 1+ the happiness I am currently trying to get Espeon or Umbreon on my heart Gold I have gotten Umbreon before so, wish me luck!

I get the three beast's (suicune, entei and raikou) in Pokemon diamond from an event. And because I'm gonna buy Black/white I want the transfer them with the Transfer machine. But my question is: Can you train them, give them ribbons, learn them some moves ... and still transfer them? If yes, keep the Pokemon their ribbons, Moves, happiness and if you 'pp up' the moves? Keep the Pokemon everything the same?

you must do battles and there happiness goes and at some point they evolve.(P.Spokemon that evolve with happiness all evolve at a certain amount or number of happiness.)
Happiness evolves certain Pokemon like chansey. To get happines massage your Pokemon in veilstone and give it heaps of lemonade. Then grow it some levels.
Train them by battling but make sure they don't get to faint, everytime you need to revive your Pokemon they're happiness points go down. ofc Pokemon's happiness comes back but it always slows the process of getting maximum happiness to your Pokemon. Just by walking around with your Pokemon gives them happiness. Other things is to give your Pokemon a SootheBell to hold, it gains extra happiness in every battle you've won. You can also get them a haircut in GoldenRod Underground to get some more happiness. This makes Pokemon really friendly.
Eat some chocolate and ice cream. Make sure you're not overweight or underweight and this decreases your happiness.
