A tee joint is usually used to split out the flow to other services and taps. In some cases there are 'dead ends' on the pipe. This is a short run going up that is a foot or so long. This is used to trap a column of air in the piping system. This helps eliminate 'water hammers' in the pipes, the knocking you hear when turning off the water.
