There are at least 3 levels of being a chef in Canada. You can be a master chef, a beginning chef, or somewhere in the middle.
I don't think you need a licenses for being a chef.

A chef's wages can be very high yes, but it does take time to get the top wages. There is no substitue for experience and knowledge. If you are fresh out of school there is no gaurentee that you will make a high yearly wage. Climb the ladder and your chances of making top wages improve with time.
