A "correct" exposure is one that gives you a photo with the tones and densities your artistic vision calls for. An "overexposed" picture is too light, and an underexposed one is too dark.

The problem is, what are you trying to achieve with your picture? Maybe I'm taking a picture of a covered bridge where you can see the entrance. If I want the most detail in the outside of the bridge, the inside will plug up because there won't be enough exposure. If the inside is more important, the outside is going to get very light. And if the important thing to me is the river under the bridge, which is very light, then the bridge itself is going to look very dark.

Bracketing means you make an exposure digitally or on film (usually at what the camera meter is suggesting). Then you make another exposure where you intentionally under-expose (usually by 1 stop) and another at 2 stops under. Then make two more that are over-exposed by 1 and 2 stops. When you are finished you have 5 photos: 2 under exposed and 2 over exposed, and one indicated exposure. When you view them, you select the one that produced the best result. Before the advent of digital photography, bracketing was reserved for mostly important exposures where something about the scene presented a feeling of doubt. The cost of film, development and printing did not lend itself to wanton bracketing. As a result, serious amateurs and professionals tended to learn more about metering, lighting conditions and the variances of exposure. Digital photography might reduce the ranks of those who understand these things.

You will need a tripod as long exposure is involved with photographing the moon. If the ISO doesn't go down that low then you will need to adjust the aperture or exposure time appropriately. # Use a spot exposure facility (if your camera has that) and expose on just the moon. # Use exposure compensation and take the exposure down by 3 stops. Between shots, look at the preview screen on the back of the camera and see what the image looks like - making adjustments as appropriate. Although it doesn't look like it, the moon is moving quite quickly across the sky and you'll need to adjust the tripod regularly to keep the image in the viewfinder.
