There is no one quality that distinguishes each noun type from another. Some are based on whether they can be counted (i.e. sheep) or not (i.e. sand) and others are distinguished by whether the item being named is concrete (such as a bird) or abstract (such as an idea), and yet others are distinguished by the specificity of the noun (common vs proper).

There are literally thousands of nouns. A noun is a word for a person, a place, or a thing. It would be impossible to list the words for every person, place, and thing in the world (or the universe, for that matter). A dictionary will list thousands of nouns, but even a dictionary can't list all of them.
