If you are talking about the instructions In James 5:14 it is to demonstrate your faith in God's healing.
Anointing of the Sick is the ritual anointing of a sick person and is a Sacrament of the Roman Catholic and Anglican Church, a mystery or sacrament in the Eastern Orthodox churches, and is recognized as a rite by the Lutheran and Methodist churches. Some Anglicans prefer also to refer to it as a rite. It is also described, using the more archaic synonym "unction" in place of "annointing", as Unction of the Sick or Extreme Unction. Although less common, this sacrament is also referred to as the Administration to the sick by some ecclesial communities.

Roman Catholic AnswerThe Sacrament of the Sick helps by giving people remission of their sins, spiritual aid and strength, and to perfect spiritual health. It is primarily aimed at healing a person's soul, there can be physical healing if that would help the person's spiritual health.

from Modern Catholic Dictionary by John A. Hardon, S.J. Doubleday & Co., Inc. Garden City, NY 1980

Anointing of the Sick Sacrament of the New Law, instituted by Christ to give the sick spiritual aid and strength and to perfect spiritual health, including, if need be, the remission of sins. Conditionally it also restores bodily health to Christians who are seriously ill. It consists essentially in the anointing by a priest of the forehead and the hands, while pronouncing the words "Through this holy anointing and His most love mercy, may the Lord assist you by the grace of the Holy Spirit, so that, freed from your sins, He may save you and in His goodness raise you up." In case of necessity, a single anointing of the forehead or of another suitable part of the body suffices. Olive oil, blessed by a bishop, is normally used for the anointing, but any vegetable oil may be substituted in case of emergency.

The institution of anointing by Christ is an article of the Catholic faith, defined by the Council of Trent (Denzinger 1716). The Church further teaches that this sacrament is implied in the Gospel reference to Christ sending out the disciples, who "anointed many sick people with oil and cured them" (Mark 6:13); moreover that the sacrament was promulgated by the Apostle James when he wrote, "Is anyone among you sick? Let him bring in the presbyters of the Church and let them pray over him, anointing him with oil in the name of the Lord. And the prayer of faith will save the sick man and the Lord will raise him up and if he be in sins, they shall be forgiven him" (James 5:14-15)

AnswerThe first grace of this sacrament is one of strengthening, peace and courage to overcome the difficulties that go with the condition of serious illness or the frailty of old age. This grace is a gift of the Holy Spirit, who renews trust and faith in God and strengthens against The Temptations of the evil one, the temptation to discouragement and anguish in the face of death. This assistance from the Lord by the power of his Spirit is meant to lead the sick person to healing of the soul, but also of the body if such is God's will. Furthermore, "if he has committed sins, he will be forgiven."

To the person ,this sacrament confers a special grace which unites the sick person more intimately to the Passion of Christ for his good and for the good of all the Church. It gives comfort, peace, courage, and even the forgiveness of sins if the sick person is not able to make a confession. Sometimes, if it is the will of God, this sacrament even brings about the restoration of physical health. In any case this Anointing prepares the sick person for the journey to the Father's House.

Answer

The sacrament of anointing, also known as "the sacrament of the sick" or "extreme unction" gives specific graces that benefits the recipient both spiritually and even physically. Such graces include:

The grace of a good death as well as patience, holy resignation and strength for death's final moments.

Graces to help ward off or fight temptations that may assail the soul at the last hour, especially those of despair.

It has penitential graces, allowing for the purification of the senses as well as their purgation and makes recompense for sin

It puts one in a spiritual and holy mindset; it helps one focus on God, stripping away the distractions of the mind and world that are soon to be left behind and keeping God alone before their eyes. This mindset helps foster a prayerful attitude and helps the dying offer their death as both a sacrifice and penance to God and as such even death becomes a meritorious action

If it is God's Will, the sacrament may restore health to the body and allow the person to recover.

According to the Roman Catholic Church, annointing of the sick is a sacrament in which a persons who is ill and likely to die, is blessed with oil. The term is also bunched in with last rites in which the person usually gives confession and receives the eucharist in communion.

healing - spiritually, mentally and sometimes even physical healing

This sacrament confers a special grace which unites the sick person more intimately to the Passion of Christ for his good and for the good of all the Church. It gives comfort, peace, courage, and even the forgiveness of sins if the sick person is not able to make a confession. Answer from a non-CatholicThrough faith and mighty prayer are the sick healed. Anointing is not just a case of someone placing their hands upon the sick persons head and doing whatever they do, no matter how much faith the person has. Anointing means just that, to anoint with consecrated oil (Usually pure olive oil). It has to be consecrated and set apart for the purpose to which it is to be used. Anointing as seen on TV are nothing but Priestcraft, and though the person will in some cases be temporarily healed it will not last. One who holds the proper authority to carry out the anointing must be called of GOD. Two priesthood holders should participate, one to anoint and the other to seal the anointing. The one sealing the anointing should be guided by the spirit as to what he should say. The faith of those who seek to be healed also plays an important part in the anointing.
