There are different types of flour depending on what grain they are made from. The most common type of flour that most people are familiar with is made from wheat that is ground into a fine powder. Refined wheat flour lacks the bran and wheat germ components of the grain, whereas whole wheat, as the name implies, is when the whole grain is used the flour. Enriched flour means that nutrients (typically ones that are lost during processing) have been added - often small amounts of iron, thiamine, riboflavin and folic acid. Wheat flour contains gluten (a protein which helps make the flour gluey), which people with Celiac disease cannot eat. Rice flour, however, does not contain any gluten.

There is no single list of elements found in all-purpose flour. However, oxygen, carbon, and hydrogen are typically in it since it contains starch.
