The fossil Pokémon from Pokémon X and Y are Tyrunt, a Rock/Dragon-type Pokémon with a new ability called Strong Jaw (it increases the power of biting moves), and Amaura, a Rock/Ice-type Pokémon also with a new ability named Refrigerate(it turns Normal-type moves into Ice-type moves). They evolve into Tyrantrum and Aurorus, respectively.
The former can be obtained by restoring the Jaw Fossil at the Fossil Lab, while the latter can be revived from the Sail Fossil.
The Sail Fossil is an Amaura and the Jaw Fossil is Tyrunt.
There are no fossils in Johto.

No, you can only pick one per version. You will need to trade for the other fossil Pokemon to complete the collection in Kalos. The Sail Fossil is Amaura, the Rock/Ice-type Pokemon, and the Jaw Fossil is Tyrunt, the Rock/Dragon-type Pokemon.
