Intel Quad Core is one of the newer technologies developed by Intel for their consumer level Core 2 Quad and higher end Xeon processors. Basically, a quad core processor incorporates four processors onto one chip. In theory, you could see a massive improvement in performance from a quad core system but in reality, most programs, (and operating systems for that matter) do not yet support full utilization of all four cores.
One graph - one core inside your processor. Two graphs - two cores inside your processor. Four graphs = four cores inside your processor. And so on... This could also indicate the presence of Intel's "Hyperthreading" which allows a single core to act as two cores as far as the OS is concerned.

Any operating system will use a quad core processor, but many of the older operating systems cannot use the multiple cores-- they simply weren't programmed to do so. In general, anything produced within the past couple years will utilize a quad core processor. Many applications, however, are not programmed to use four cores, though there is a growing acceptance to use multiple cores to speed the process. As for operating systems, any recent Linux distro, Mac OS X, Vista and Windows 7 will use four cores, but in general, the newer the OS, the better the utilization of all four cores.
Intel had produced four bit and eight bit Microprocessor chips in the 1970's and it started it's 16 bit family of microprocessor chips with the 8086 chip and the family has developed through five generations to date.
