I'm not quite sure what you mean by "themes"--the underlying theme, or the main ones? I guess I'll just mention both. Anyways, the underlying one is the power of redemption. Anakin Skywalker was the "Chosen One" but many scrapped this idea with his fall from the light side. Wielding the power of good, however, Luke Skywalker managed to save his father, so that he died a Jedi, having killed his Master and thus fulfilled the prophecy. The more obvious themes are the usual ones, like "good vs. evil."
Some themes are space, war, political uprest, and future.

Circus-themed weddings are currently quite popular. There is also a rise in Harry Potter themes. Star Wars and Star Trek themes are always fashionable amongst adherents. 50s, 60s 70s and 80s themes are also popular.
I'm afraid Lego City and Lego Star Wars are completely different themes. They will never merge in any sets, games or films. Besides, Star Wars fans wouldn't want to buy a Lego Star Wars set with Lego City in it as well would they? Sorry, but you cannot beat Lego City in Lego Star Wars.
For the Star Wars films, John Williams is the sole composer. Kevin Kiner has done the composing for the Star Wars: The Clone Wars animated series, but the themes follow the consistency of the John Williams scoring.
It's coming near the end of 2011, and there have been some great Lego Star Wars releases this year. I've had a sneak preview of the Lego Star Wars sets coming out in 2012, and they are so cool! The theme should continue as it is one of the highest Lego selling themes ever! :)
Hopefully not for a while. I've had a look and Lego Star Wars will be definitely continuing in 2012. I doubt they will ever stop it as it gets the best sales for Lego being one of the biggest Lego themes ever!
