There's more than three Chinese languages. If by "languages" you mean "branches of topolects", there is Mandarin, Yue (encompassing Cantonese), Wu, Min (encompassing Min Nan, Min Bei, Min Dong and Coastal Min), Hakka (I believe some Sinologists include Shehua here), Gan and Xiang. There are some Chinese languages that don't fall into these classifications like Waxiang and Caijia.

Forgot Huizhou and Jin (sometimes grouped with Mandarin). Oh, and there are non-Sinitic languages spoken in China as well, such as Zhuangyu from the Kra-Dai languages, Tibetan, Manchu in Heilongjiang etc.
