Any crop that is grown for feed, fibre, oil, ethanol or food for humans has any one or all parts used and utilized for whatever industry requires that part. Barley, canola, wheat and corn are harvested mainly for the seeds, but all parts of the plant--except canola--are harvested and used as straw or feed for livestock. Any garden or greenhouse that grows vegetables and fruits have plants that have their roots, stems, leaves, seeds and/or fruits harvested: carrots, potatoes, lettuce, celery, broccoli, beans, peas, chives, onions, chevots, sunflowers, peppers, etc. Flax and lentils are also grown in Alberta.
There really is no such thing as "over-harvesting" something. Either it's going to be harvested or it isn't, it doesn't matter if it's a plant or animal.
