The major categories are beer, wine, liqueur, and spirits. Beer has a lot of different varieties but usually will have the introduction of hops and/or rice. Wine is usually made from grapes; however, there are other beverages that are called "wines" but are not really wines; e.g., sake. Liqueurs are generally lesser in alcohol content than spirits. An example is amaretto and herbal liqueurs. Spirits are generally somewhere in the 40% ABV range, like whiskies (Scotch whisky, bourbon, Irish whisky, etc), rums, tequila, and so on.
