If you want a challange, consider doing a souffle. (Look for a "twice baked" souffle recipe if you want less of a challange, since these can be prepared and baked ahead of time, then you bake them again in the over just before serving. They don't sink too much. Single baked souffles you have to prepare, bake then serve with no delays in between, so they're fairly unsuitable for making when you have guests over and need to entertain them.)
