What are tracklements?

Tracklements are meat condiments - horseradish, mustard, etc. - usually naturally found in the native habitat of the meat they are used on. This is a word mostly used, though still infrequently, in the smokehouse subculture of Britain's culinary culture. Terry Pratchett uses it in his book The Long Earth, and the other definitions I read of are similar.

Mind you, I am answering this because after seeing such a cool word used in Pratchett's book, I looked it up all over the place to get a better feel of the 'real world' definition - anyone who has read something of Pratchett's might understand this urge since what you are reading is not always something to be well applied in life. A truth that is sometimes disappointing to me ;). When I saw that the question was unanswered here, I thought "What a shame." If anyone has a better answer, perhaps someone who has use of the word in their daily life, I would love to hear it.
