Coal ore: Drops coal when mined that is used for furnace fuel and torches
Iron ore: drops iron ore that can be smelted to ingots to make tools, minecrafts, and lots of other items.
Lapis ore: Drops lapis lazuli that is used for decoration and coloring wool
Gold ore: Drops gold ore that can be smelted to ingots to make tools (not recommended), powered rails, clocks, apples, and a few other things.
Emerald ore: Drops emeralds that are used for trading with villagers.
Redstone ore: Drops redstone dust that is used for making circuts, kind of like an electricity system.
Diamond ore: Drops diamonds that are used for very strong tools, enchantment tables, and thats about it.

There are currently 7 ores in vanilla minecraft 1.6. They can all be crafted into their respected blocks by putting nine of the same pure ingot, dye or dust into a crafting table i.e. not the ores. They are: coal, iron, gold, diamond, lapis lazuli, redstone and emerald. Iron and gold ore have to be cooked in a furnace to retrieve their respective ingots. Here is an image of the 7 ores: There is another ore called the nether quartz ore which is used to craft solid quartz in minecraft.
