you are removing the build up of plaque (food you have chewed throughout the day) from the surface of your teeth. Plaque is what causes tooth decay, and the longer you let it stay on your teeth the more microscopic decay occurs, multiply this by decades and then you have tooth decay (cavaties) much much sooner or much much later or not at all really depending on how often and when you brush, and how well, and how much acidic and or sugary foods you eat/drink.
