I believe she is reading "Sleeping Beauty" because she says it's about daring sword fights and a prince in disguise. So I think she was referring to sleeping beauty when prince Phillip is fighting the dragon and how Rose doesn't know he's a prince when she first meets him.

The Beast kept Maurice (Belle's Dad) captive until Belle said: "Wait... Take me instead." Then, for about a night Belle was his prisoner, and then they fell in love. The reason the Beast held Maurice captive in the first place, was because he would tell everyone about this monstrous, terrifying beast and they would all kill him. Now, if you were talking about the Beauty and the Beast BOOK (written in the 1700's for Adults) instead of the Disney movie, the reason he held him captive is the same.
