Either gun is fine. I myself am not a fan of the 308, but I know a lot of people who are. However, I know a lot more people who like the classic, Remmington model 700 wood stock bolt action 30-06, the class hunting rifle. A good scope with a 30-06 will offer you the perfect knock down which will have a lot of power, but not ruin your trophy. You can kill a deer from up to 300 yards, and they dont kick too bad. You wont feel the kick if your shooting at game, but if your worried about it, try the remmington model 7800 wood stock semi automatic 30-06, which is the same but just an automatic which will take away some recoil. If you are a close range hunter, a 30-30 has as much knockdown as a 30-06 in 150 yards and under. I hope my advice was able to help you, and happy hunting!
Whether you need a 5.56 or a 308 depends what you intend to shoot. A .308 is intended for larger game like deer and elk.
