Let me focus on one side of the coin- too much insulin. This can lead to drastically lowered glucose levels, causing organ failure & quite possibly death.

On the other hand, a sudden influx of carbohydrates can render the insulin level to be lower than 'therapeutic', in short the insulin isn't effective. This & other questions can be answered best by your family Doctor or a Nutritionist/Dietitian.
