The most likely causes would be:
defective expansion valve
low refrigerant (generally as a result of a leak)
contaminant buildup on the inside of the coil
The big question is which coil are you referring to? A couple of causes are 1-Low on freon 2-Filter dirty and not enough air flow across coil.
I would say that nothing causes a coil to overheat except for a bad coil, replace the coil and see what happens.
