A majority of rotting in food is caused by microbes. It is important to understand that most rotting organisms are not harmful to humans, they only make the food taste bad, but there are harmful molds and bacteria that do not rot the food. Therefore, food that doesn't smell, look, or taste spoiled could be harmful, and rotten food may just taste bad. This doesn't mean anyone should consume rotten food, because the likelihood of harmful organisms increases as the food gets older and more decomposed.

ANS2:Food deterioration begins with the breakdown of the cellular tissue by enzymatic action that allows the growth of microbes. They are organisms that need food to live just like we do. Therefore, they feed off of foods such as bread, lettuce, etc . . . most any food, really.

As soon as the vegetables are harvested the decomposition process has begun. Microorganisms like fungi and bacteria will feast on the tissue causing the cells to break down.
