into milk or water, the cells recover their humidity, in this case the

cereal becomes soggy.

This is because when the milk is poured, the cereal itself absorbs the milk.

This is also why the milk is lower than when you poured it before. The milk also is high is acids which break down the coatings used to make the cereal crunchy. Shellac is used as the coating to slow down the absorption process.
