It's caused by different temperatures and air getting into the water, cold air. When it unfreezes, it is probably going to be in a warm enviorment like snow melting on a late winter day or early spring day. It can take a liquid, like cranberry juice to take about 5 hours to just get a thin layer of ice. That is because fruits like lemons, limes, grapes and cranberrys have active chemicals and acids in them, like burning your eye with a lemon, it's not pleasant!
