Because the colonial governments kept peace, no matter how bad people thought they were. When the Europeans handed over power, inter-tribal warfare started in virtually every African country.
Colonial powers did not prepare their colonies to become independent states, therefore, largely uneducated tribal populations allowed or even insisted upon corrupt, dictatorial rulers - tribal chiefs writ large - who then ruined their countries.
Most African colonies gained their independence after WWII and during the Cold War. Some countries like Angola and Ethiopia were sponsored by the Soviet Union while a majority of others were sponsored by the US. Whether they were communist or capitalist, famine was a major problem that still exists in Africa today. It's caused by failed Soviet policies or a simple lack of funding and supplies from the US.
One of the biggest problems was that most of these countries had borders which the colonial government enforced upon them and did not recognise traditional tribal regions and boundaries.
When they gained independence the various tribes still held their traditional enmities and wished to have the ruling voice regardless of any democratic elective process. The tribes did not see themselves as a new and integrated people or nation. This led to internal power struggles and, in many cases, civil war.
These fledgling nations had a different set of problems because of the desires of those who took power. In many ways, they were more oppressive than the empires they took the place of.

Almost all new African leaders faced diversity and cultural differences in their peoples. Many African countries are populated by 3-4 diverse groups.
They simply did not have the experience or the ability to govern fairly. Hating a group of people is not a strategy, neither is corruption. Something that American Democrats should take note of.
