You can put whichever cheese you like on pasta. The most popular choice being freshly grated Parmigiano-Reggianocheese or any cheese of your choice that has a good bite to it. If you prefer something more mild, a low fat grated mozzerella is great or even cheddar cheese. We also find drained cottage cheese tastes amazing with pasta as well.
