Marble is subject to certain chemicals leavign stains or causing the stone to break down, also marble cutting boards can get "cuts" running through them if using certain types of knives, this can harbor bacteria and is VERY difficult to clean. FYI-Most marble cutting boards aren't actually used for cutting, but for rolling dough on or performing similar tasks
