No one knows, and most likely no one will ever know. There are no remains of Mary or any evidence from the time she was alive that give us clues as to what her hair color was. Throughout the centuries, many artists have depicted her with brown hair but since these artists were never around in her lifetime, they do not know for sure.
In the book of Revelation 1:15, it mentions that Jesus' feet were like bronze glowing in a furnace, which some interpret as referring to his skin color. This description is not found in the book of Matthew.
