Depends how fancy you want to get. Simplest way: Throw 1 Tbsp of beef bouillon granules into a small pot with about a cup of water. Bring to a boil. Meanwhile, mix 2 Tbsp cornstarch with 3-4 Tbsp cold water until completely smooth. When bouillon boils, slowly add cornstarch, stirring constantly (with a whisk if possible) to avoid lumps. Drain and add 1 sm can of sliced mushrooms. More complex (you need to do a beef roast): Slice about 1 cup fresh cremini or button mushrooms, finely chop 1 medium yellow onion. Heat 3 Tbsp unsalted butter in a saucepan over medium-high. Add mushrooms and onions, sautee until golden brown but still slightly firm. Set aside. Deglaze roasting pan, pour pan juices into saucepan, bring to a boil. Thicken as above with cornstarch. Add mushrooms and onions. Salt and pepper to taste.
Risotto is a creamy Italian rice dish that involves a lot of stirring but it is worth the work!
How to make risotto:1. Use Arborio rice which is very starchy and can absorb a lot of liquid.
2. Heat chicken stock (broth) on the stove until it is warm. Use three times as much liquid as rice. So if you have one cup of rice, heat three cups of stock.
3. In a separate pan, saute some diced onion or shallot in a skillet along with the rice. When the rice is starting to become translucent, add a tablespoon of red wine for flavor.
4. Add 1/2 cup of the warm stock to the rice and stir.
5. Continue to stir constantly until all the liquid is absorbed.
6. Add another 1/2 cup, continue to stir constantly. Repeat process until you have added all the stock.
Reminder: Don't leave risotto unattended! This dish is a labor of love and requires your constant attention.

you can put in whatever you want. Sometimes I chuck in some peas, carrots, broccoli, mushrooms and stock to give it that extra flavor. But don't be stupid and put in fruit because that would spoil the dish. But don't be afraid to put in anything.
