If you have chicken you could make chicken with a lemon sauce and rice as a side dish. Chop up the chicken and allow it to infuse in a bowl for a few hours with chopped garlic, lemon rind and lemon juice. Fry gently in a little oil on a medium heat and add some chicken stock. Boil the rice as per the packet instructions and quickly beat an egg yolk into the chicken with lemon a few minutes before serving.
You could do a side of beans, rice, or some chips and salsa or guacomole. A good side could also be some cooked or steamed vegetables, or a small salad.
I typically like to use some rice that is chicken flavoured.
