Because overnight you are lying down, and gravity does not have a "compression" effect on your body (Your spine). Because of this, your spine will slightly "spring" back and when you wake up, you will be slightly taller. As the day goes on, you will get progressively shorter.
This might depend on a) what is in the cans b) how accurate the scales are If a can with liquid in it is left open overnight some moisture may be lost by evaporation - making it slightly lighter than the unopened can. If a can is open, some particles of dust might drift into it - more than would settle on an unopened can - and make it slightly heavier than the unopened can. However, If the can has nuts in it I'll be tempted to take one or two, or a handful - making it considerably lighter than the unopened one.

I often bake bread this way. Flour contain a lot of protein. I mix with cold water and wheat plus a lil bit of yeast and salt. When you let it stay overnight, then you might get a slightly thicker mixture.
